Mediterranean Roasted Salmon Chunks | Bonnie Taub-Dix

In our family, salmon is a staple. Oh sure, we love that it’s a great source of protein, omega-3 fats and whole host of other valuable nutrients but most of all…it’s absolutely delish. Mediterranean Roasted Salmon Chunks

serves 6

Ingredients

One large salmon fillet – around 2 pounds

2 tablespoons Moroccan, Turkish, or Middle Eastern Spice blend

8 garlic cloves, minced

3 tablespoons chopped nuts

2 tablespoons chopped fresh herbs (preferable dill and parsley)

Cooking spray

Directions

  1. Preheat oven to 450 degrees Fahrenheit.
  2. Line a large cookie sheet with foil and spray wIth cooking spray. Set aside.
  3. Cut salmon fillet into chunks and place in large bowl bowl.
  4. Add spices, garlic, nuts, and herbs and mix together.
  5. Spread salmon mixture out evenly on prepared pan and bake in oven for around 20-30 minutes (depending upon the thickness of the salmon chunks). Turn pieces over midway to allow for even browning.
  6. Remove from oven and serve warm over quinoa, couscous, barley, wild rice or a medley of roasted vegetables.
