An easy recipe for healthy chicken salad. Perfect for a quick, healthy lunch on the go! Gluten-free and dairy-free.

Although I could stand by my counter for hours cooking up a storm…there are times when convenience rules. Long leisurely dinners or bread basket filled brunches make weekends special but mid-week lunches need to be fast while bringing energy that lasts.

Sometimes I vary my ingredient list by adding  chopped nuts, chick peas, dried fruit or fresh herbs. Any of your faves can be included… so get ready to deliciously clear our your fridge!

Chicken Salad from Pouch to Plate

Ingredients:

1 packet StarKist Chicken Creations – Zesty Lemon Pepper type

1 cup arugula 

1/4 cup carrots – shredded and chopped 

1/4 cup pears – cubed

1/4 cup grape tomatoes – sliced in half

8-10 thin slices of avocado – sliced with peeler

Squeeze of balsamic glaze (optional)

Directions:

  1. Place bed of arugula on plate.
  2. Open packet of StarKist Chicken Creations – Zesty Lemon Pepper type and place in center of plate on top of arugula.
  3. Surround StarKist Chicken Creations with the carrots, pears, tomatoes and avocado curls.
  4. Top with a squeeze of balsamic glaze, if desired.
