This recipe is an upgrade from your basic banana bread including the addition of your favorite frozen fruit, like cherries or berries.  Frozen fruit is easy to keep on hand and it provides a wealth of nutrients.

Note that you can use all granulated sugar if you don’t have coconut sugar and if you like your breads sweet, you can increase the sugar content with an extra ¼ cup. I like my quick breads less sweet with a touch of homemade jam and paired with a scoop of cottage or ricotta cheese or a schmear of almond butter.

Banana Cherry Berry Bread with Oats and Dark Chocolate Chips

Ingredients:

1-1/2 cups whole wheat pastry flour

½ cup all-purpose flour

1 cup old-fashioned rolled oats

2 tablespoons cocoa powder (sweetened)

1 teaspoon kosher salt

1 teaspoon cinnamon

1 teaspoon baking soda

½ teaspoon baking powder

3 large eggs

1/3 cup vegetable oil (or avocado oil or extra light olive oil)

1/3 cup Greek yogurt

¼ cup granulated sugar

¼ cup coconut sugar

1 tablespoon vanilla extract

2/3 cup mashed banana

2/3 cup frozen fruit (cherries, berries)

Dark chocolate chips and sliced almonds for topping (about ¼ cup each)

Non-stick cooking spray

Directions:

  1. Preheat oven to 350 degrees F
  2. Spray a loaf pan with cooking spray
  3. Mash banana and defrost and mash frozen fruit and set aside.
  4. In medium sized bowl, measure and whisk together dry ingredients (whole wheat pastry flour through baking powder) and set aside.
  5. In a large bowl, whisk wet ingredients (eggs, oil, yogurt, sugar, vanilla extract) together.
  6. Combine dry ingredients into wet ingredients and mix, but do not over mix.
  7. Fold in banana and mashed fruit.
  8. Scrape batter into prepared loaf pan.
  9. Top evenly with chocolate chips and almonds.
  10. Bake at 350 degrees F for 50-60 minutes or until tester inserted into the center comes out clean.
  11. Turn bread onto cooling rack and let stand until cool.
