Bruschetta (pronounced broo-skeda), is generally thought of as a savory Italian appetizer, welcoming the rest of your meal with Italian bread rubbed with olive oil or butter and garlic and topped with tomatoes.
But since I’m kind of a recipe rebel, I like to think outside the bread by jazzing up a basic bruschetta and subbing in Snack Factory® Pretzel Crisps® as a crunchy base and topping each crisp with a few of your family’s favorite foods. Pretzel Crisps are a great, kid-friendly alternative for traditional Italian bread because they’re a delicious snack, but still made with a simple ingredient list and are only 110 calories per serving. Aside from the Original version, there are several other Pretzel Crisps flavors available that make a great bruschetta base, including Garlic Parmesan and Everything. They even have a Gluten Free Original version for those with a gluten intolerance or allergy.
Whether you serve this treat as an afternoon snack or as a quick lunch, your kids will love this DIY bruschetta bar idea — just be sure mom or dad is around to pop their creations into the oven. Here’s the bonus: By choosing powerhouse toppings like cheese, poultry, beans, or a medley of veggies, you’ll boost the nutritional value and flavor of this delish dish. Studies show that kids (and many adults) don’t get enough calcium, potassium, or fiber. By adding a variety of these toppings, you’ll be incorporating key ingredients to help fulfill daily nutritional needs. As a bonus, this tasty snack will keep you feeling satisfied and energized to help navigate hectic back to school schedules.
DIY Bruschetta Bar
You can make your bruschetta as complicated or simple as you’d like, depending on whether you’d like to whip up some guac or hummus from scratch or try one of the store bought types. Here are a few ideas to make this recipe easy enough for your kids to create their own favorite combinations in minutes (with a little help from mom and dad when it comes putting them into the oven.)
1 bag of Snack Factory® Pretzel Crisps® – Original or any one of your favorite flavors
1 package shredded mozzarella cheese
1 container store bought humus
1 contain store bought guacamole
1 large apple – peeled, cored and chopped
splash of lemon juice
Heat oven to 350°F.
Cover a cookie sheet with foil and spray with cooking spray.
Drizzle a few drops of lemon juice over the chopped apple to prevent browning. Add a sprinkle of cinnamon and mix. Set aside.
Place a layer of Snack Factory® Pretzel Crisps® evenly over the surface of the cookie sheet.
Top Snack Factory® Pretzel Crisps® with a thin layer of shredded mozzarella cheese.
On top of the cheese, add about 1 tablespoon of either humus, guacamole or chopped apple onto each Snack Factory® Pretzel Crisps®.
Place cookie sheet in oven for around 10 minutes or until the cheese starts to melt.
Remove from oven and transfer your Snack Factory® Pretzel Crisps® creations to a platter. Serve warm.
